I hope you all enjoyed the turkey recipe I shared last week and it got you in the cooking spirit for the holidays. Next on the list of holiday essentials is the dessert. Some may have pie or cobbler, but my family is going to be enjoying my Meme’s famous pumpkin pound cake. Who doesn’t love something pumpkin at the Thanksgiving table? There’s no one who can bake a cake like my grandmother. I promise this recipe is sure to impress your entire Thanksgiving crew

Frances’s Pumpkin Pound Cake

Ingredients: 1 cup Wesson oil, 2 cups sugar, 2 teaspoons baking soda, 4 eggs, 1 teaspoon salt, 2 teaspoons cinnamon, 2 cups flour, 2 cups pumpkin

Icing ingredients:  1/3 cup margarine, 2/3 teaspoon vanilla, 1 2/3 cups powdered sugar, a splash of milk.

Instructions: Begin by preheating your oven to 325 degrees. In a large bowl beat eggs and sugar together with a hand mixer. Next, add the flour and oil to the eggs and sugar mixture and mix until combined. Add the cinnamon, baking soda and salt and mix again. Finally, add the pumpkin and mix all ingredients until batter is formed.

Grease a tube pan and pour the batter in. Bake for 1 hour. Remove from oven and let the cake completely cool.

 Once it is completely cooled it is time for icing. Combine the margarine, vanilla, powdered sugar and milk. If you want a thick icing add less milk. Drizzle or spread icing on top of cake and serve with a cup of coffee or a cold glass of milk.
