Fruity foods are my favorite during the summer. I love having a big bowl of berries in the refrigerator to eat on throughout the week, and fruit over ice cream is always a special treat. But I will say, my absolute favorite way to eat fruit is with savory dishes. It’s the perfect way to make whatever you are eating light, fresh and summery!

This week I thought I would share with you a dish that is very versatile. You can have this by itself with chips, on top of your favorite grilled or baked fish or chicken, or even with tacos as something to change things up a bit.

Grilled Pineapple Salsa

Ingredients: 1 fresh pineapple, 2 tablespoons of extra virgin olive oil, 2 peaches, one jalapeno, ½ a red onion, the juice of 1 lime, kosher salt, and 2 tablespoons of fresh chopped cilantro.

Instructions: Start with the preparation of the ingredients. Peel, core and slice pineapple into rings. Peel peaches and dice in to bite sized pieces. Remove jalapeno seeds to reduce heat and mince jalapeno. Chop ½ a red onion into bite size pieces. Chop cilantro.

Once your ingredients are prepared, preheat the grill to medium high heat. Brush and coat the pineapple with the olive oil to prevent it from sticking. Place the pineapple on the grill and cook on both sides until the pineapple is charred with those classic grill marks. Once the pineapple is done, remove from heat and allow to cool for 3-5 minutes. Chop into 1 inch cubes.

In a large mixing bowl, combine prepared ingredients with the grilled pineapple. Squeeze lime over the top avoiding any seeds being added to the mix. Add salt to your taste and enjoy!
