I know I keep tIt’s never too early to start thinking about your Thanksgiving dinner, after all, it is the biggest meal of the year! I thought throughout the month of November I would share some recipes that can help you get creative this holiday season. This first one is sure to be a hit with your family. It’s a twist on a classic everyone loves.
Twice Baked Sweet Potatoes
Sweet Potato Ingredients: 4 sweet potatoes, ½ cup Greek yogurt, ½ a tablespoon of pumpkin pie spice, 1 tablespoon of maple syrup, 1 tablespoon of brown sugar, a pinch of salt.
Topping Ingredients: 2/3 cup chopped pecans, 2 tablespoons of melted butter, 2 tablespoons of light brown sugar.
Instructions: Preheat your oven to 400 degrees. Use a fork to pierce the potatoes, place on a baking sheet and bake until potatoes are soft (20-45 minutes based on how large your potatoes are.) Cut the potatoes in half-length wise, scoop out the insides and place them in a large mixing bowl. Place the skins back on the baking sheet to use later. Mash the insides of the potatoes until smooth. Add the Greek yogurt, pumpkin pie spice, maple syrup, brown sugar and salt and mix thoroughly. Scoop the filling back into the skins. In a separate bowl, mix all the topping ingredients. Sprinkle over the filled sweat potato skins. Bake at 400 for 12-15 minutes. Drizzle with extra syrup when finished and serve!
